  • 10–12 red dates (jujubes), pitted
  • 30–40 g sliced / toasted almonds
  • 600 ml water
  • 1–2 tbsp rock sugar or honey (adjust to taste)
  • Optional: goji berries for garnish

Step 1

  1. Soak bird’s nest: Soak 1–2 tbsp in room temp water 30 minutes. Rinse gently and remove impurities.

Step 2

  1. Prepare dates: Rinse red dates, remove pits if necessary, tear in halves for faster simmering.

Step 3

  1. Simmer: In a pot, add 600 ml water + red dates; simmer 20–25 mins until soft and fragrant.

Step 4

  1. Add bird’s nest: Add prepped bird’s nest to the simmering dates; keep heat low and simmer 10–15 mins until gelatinous.
  2. Finish & sweeten: Add rock sugar or honey to taste. Stir gently until dissolved. Sprinkle toasted almonds and goji berries when serving.
